Spirit Thief was born as an exploration between whisky and wine. Our highly-selective barrel-curation programme allows us to extract the character of each cask, deliberately imparting distinct notes to our whisky from full wine-cask maturations. Our chosen casks are specifically toasted and charred to complement and enhance already exceptional spirit and build the elegant and complex flavour profiles we covet in our Tasmanian single malt whisky.
Inspired by the skills founded in traditions honed by the generations before us, our whisky relies on collaboration; we are artful, but repentant; there is always honour among thieves.
